Tags and categories are really important part of WordPress platform, only if used properly. Tags stuffing will not do any good to your blog. Instead, it will generate more duplicate content.
On the other hand, a post must have at least one category selected or it will end getting uncategorized in your blog.
Meta Tags are not important but Meta Description is something you should not leave empty.

How To Noindex WordPress Tags and Categories in Yoast plugin:
#1. Login to your WordPress “Dashboard“. On the left-hand side, you will see menu options, click on “SEO“.
#2. You will find additional options under “SEO“, click on “Title & Metas“.
#3. A new window will be displayed on your right-hand side screen. Now select “Taxonomies” tab.
#4. You will have Yoast noindex setting for categories, tags and format. I have no-indexed my tags only, as I want my categories to be indexed.
#5. Now click “Save Changes“.
How To Noindex WordPress Tags and Categories in All in One SEO:
#1. Login to your WordPress website. In the left-hand side of your “Dashboard“, you will see “All in One SEO” option, right above your “posts“.
#2. Now click on “General Settings” under All in One SEO.
#3. A new setting window will be displayed on the right-hand side of your screen including all general and advanced setting options.
#4. Scroll down to “Noindex Settings“, check options you would like to set as noindex for your website. As you can see on the image below I have checked all options except “category“.
#5. At last, remember to scroll down the page and click “update options“.
SEO optimized blog always get good SERP and maximum traffic. Indexed tags and categories are not SEO optimized. To avoid duplicate content in your blog, you must noindex tags and categories.
I have noindex all tags in my blog but not categories as according to me categories are good to be indexed. But tags are one thing you can try to set noindex.
